By the end of this course participants will be able to understand and apply the following:

  • What is terroir and how factors such as the soil, topography, and climate can influence the properties of wine
  • What is vinification and how different techniques can influence the properties of wine
  • What other factors such as aging, barrel, storage,cork and bottle size can influence the properties of wine
  • What factors you should consider when you create a pairing between food and wines and how wine should be served
  • Factors that need to take in consideration when you create a wine list and how BTG program can help you to increase profitability
  • Storage & serving temperatures for different categories of wine
  • How the understanding of grape originated spirits can help with up-sales
  • How you can run an efficient par stock and avoid waste

About the Instructor

Born on October 22nd 1981 in Limassol, Cyprus. Graduated from Lanition A’ Lyceum in 1999 and after fulfilling the two years obligatory military service, was accepted in T.E.I. Athens, at the Food Technology and Nutrition Faculty. Five years later graduated with the Oenology and Beverage Technology diploma. Wine tasting and sommelier seminars followed the next year at Genius in Gastronomy in Athens.

Throughout the student years was working in service at various establishments in Athens. After graduation in 2007 started working at Deals SA in the sales department for seven years. At the same time he was working part time in wine service at various establishments in Athens.

In 2013 created the ‘Wine in West’ wine bar in Egaleo which co-owned until 2015. At the same time changed career in 2014 to academic by starting teaching ‘Bar-Oenology’ and ‘Cellar & Bar Operation Management’  at V.T.I. Omiros and Aegean Omiros College.

In 2016 returned to Cyprus and started teaching ‘Oenology’ for the Ministry of Education & Culture (Educational). At the same time was the Beverage Manager of Columbia Resort in Pissouri, until 2018 when returned to sales for a short period of time as Sales/ Wine Manager at Desras Trading in 2018, Fereos Fourpoint Distribution in 2019 who later was acquired by Tempo Beverages Cyprus until 2021.

In 2018 & 2022 participated in the 11th & 13th Cyprus Wine Competition as a member of the jury of tasters. In 2019 he participated in Thessaloniki International Wine & Spirit Competition as a member of the jury of tasters.

Today he is teaching ‘Oenology’ for the Ministry of Education & Culture (Educational) for the 7th year and created Cava Novinophobia, a retail shop for selected wines and spirits, as well as a tasting and Wine & Spirits venue. Novinophobia is also active in the wine industry consulting on wine matters for various clients, creating wine dinners and tours as well as maintaining an e-shop.
